Having spent months eating cereal for breakfast and lunch, with a diet frozen meal for dinner, Kristi found herself at the hospital with heart palpitations. The doctors explained that her body was not able to handle what she was doing to it.
Time for Plan B When the cereal diet failed, Kristi took a different path. “I got Tosca’s book and I cleaned out my kitchen cabinets,” she says. Kristi knew that building muscle would be incredible beneficial and so she found herself a trainer who helped her learn how to work out. “I was discovering the ‘me’ I was missing and an entirely different woman I had never met before. I felt so empowered,” she says.
Kristi-Youngdahl Now weighing an amazing 113 pounds, Kristi participates in fitness competitions and has even run a half marathon. Working as a personal trainer, she hopes her journey can inspire others.

1¼ cup oats
1 tablespoon pumpkin pie spice
1 tablespoon cinnamon
½ cup agave nectar
2/3 cup unsweetened applesauce
2/3 cup natural canned pumpkin
1 cup sun butter
1 cup chocolate protein powder
Preheat oven to 350 degrees F. Scatter oats on a baking sheet and toast for 10-15 minutes, or until golden brown. While oats are toasting, combine remaining ingredients in a large bowl. Add toasted oats and stir. Transfer batter to a 10×10 cake pan, and bake 15-20 minutes. Serves 4.
